Tomato Sauce Called ''concasse''.

INGREDIENTS -1 1/2 -2 kilos of tomatoes -150 ml olive oil -2 small pieces of garlic 1-2 onions medium size 1/2 batch of mint -1 cup of tea water -sugar Preparation -You wash the tomatoes and pour them in boiling water. You peel them, remove their seeds and cut them to cubes. -You heat the olive oil in a casserole and fry onions and garlic for some minutes, till they shrink and become smaller. -You add the cubes of tomatoes and mix -You throw the water in the casserole and all other ingredients and leave sauce gets half boiled for 35-40 minutes, until it's left humid in the end.
